Ingredients

3 bananas

2 eggs

1/3 cup melted coconut oil or melted butter (cooled)

2/3 cup maple syrup

1 cup gluten-free flour
-
2/3 cup oats
-
1 tsp baking soda

2 tsp cinnamon
-
optional: 1/2 cup chocolate chips
Instructions

Preheat oven to 350°F and line a loaf pan with parchment paper.

In a large bowl, mash up the banana. Once fully mashed (some lumps are ok!), add in the cooled butter, maple syrup and eggs. Stir until fully combined.

Pour in the remaining dry ingredients and stir until everything is well combined. Stir in chocolate chips if desired.

Pour batter into the lined loaf pan.

Bake the loaf for 55 minutes or until a toothpick comes out mostly clean. Allow to cool in the pan, then lift by the parchment paper to continue cooling on a cooling rack.
